Nacho Casserole

The Taco Salad that is always a hit at our house is very similar to this recipe. 
But I thought this would be a nice change and we actually liked it a lot more than the usual! 

Nacho Casserole

Ingredients 

8 tostada shells*
1.25 pounds ground turkey 
taco seasoning packet 
1 1/2 - 2 cups low fat mexican cheese 
1 15 oz can fat free refried beans 
1 cup salsa 

The following are all optional toppings: 
tomatoes
olives 
green onions 
avocado

*The original recipe calls for tortilla chips but tostada shells have less fat and calories than chips. You could also used crunched up taco shells which also have less fat and calories. 

Directions

Preheat oven to 375 and coat a 9 by 13 with non-stick spray.

Prepare ground turkey with taco seasoning packet as directed. 

In a medium saucepan heat beans and then mix in salsa and 1 cup cheese. 

Crunch up four tostada shells and sprinkle on the bottom of the pan. 


Spread bean mixture over the shells. 


Sprinkle meat mixture on top of the beans. 


Crunch up the other 4 shells and sprinkle them on the meat. 

Sprinkle 1/2 cup - 1 cup cheese on top. 


Bake for about 10 minutes or until cheese is melted. 


Dish out and serve with desired toppings!
