Abby Cooks: Pita Pizza for Two

This is a favorite lunch for us and Abby can make it (and surprise, surprise, it's italian food). 
Abby likes her pizza pretty plain so that is how she makes it. 

Pita Pizzas for Two 

Ingredients 

2 Whole Wheat Pitas 
1/2 cup pizza sauce 
1/2-1 cup mozzarella cheese 
10 - 15 turkey pepperonis

Directions 

Preheat oven to 350. 

Spray cookie sheet with non-stick spray and also spray each pita. 

Spread 1/4 cup sauce on each pita. 

Sprinkle 1/4-1/2 cup cheese on each then put as many pepperonis as you like. 

Bake for about 5-10 minutes or until cheese is melted and bubbly.

Abby Cooks: Easy Stromboli

I am realizing a trend...
Abby only cooks Italian food. 
This is another recipe she can make pretty much all by herself! 

Easy Stromboli 

Ingredients 

1 loaf frozen bread dough 
low fat or part skim mozzarella 
turkey pepperoni 
Italian seasoning 
spaghetti/pizza sauce 

Directions 

24 hours ahead of time, allow bread loaf to thaw in the fridge. 
Take dough out and let sit on the counter for about 1/2 hour to an hour before starting. 
Preheat oven to 350. 
Spray counter top with non-stick spray and then stretch the dough into a rectangle shape, about 9 by 13. 


Sprinkle dough with Italian seasonings. 


Sprinkle with cheese and lay out pepperonis. 


She went a little crazy! 



Roll into a tube (hers seems to stretch while she did it!) then place on a greased cookie sheet. 


Bake for 30 minutes. 


Slice and serve with sauce for dipping.

Abby Cooks: Pizza Pockets

This is another recipe that Abby can make all by herself and she loves it! 

Pizza Pockets 

Ingredients 

reduced fat crescent rolls 
Hormel Turkey Pepperoni 
mozzarella cheese, part skim
spaghetti sauce for dipping, jar or homemade


Directions 

1. Pull apart crescent rolls into 8 triangles. Put a little cheese and a few pepperonis in the center. 


2. Roll them up into little pockets. 


3. Place on a greased cookie sheet. 


4. Bake for about 12 minutes or until golden brown. 


5. Serve with some dipping sauce and veggies.

Abby Cooks: Kid-friendly Pasta Salad

Abby loves to help me cook. 
She is always eager to grab the ingredients from the cupboard, help measure, pour, and stir. 
However, lately, being the 3 1/2 year old that she is, she wants to cook "all by myself." 
So I found a few recipes that (with a small amount of prep work done by me) she can make herself. 
The first recipe she tried was a pasta salad that we have been eating for lunch.
 She is so proud of herself and it is too cute! 

Kid-friendly Pasta Salad
recipe adapted from Live, Laugh, Cook

Ingredients 

About 8 oz. cooked whole grain rotini
4 oz. low-fat cheddar cheese (cubed) 
1/2 a bag of turkey pepperoni (cut into fourths) 
about 1-1 1/2 cups low-fat Italian dressing

Directions 

Dump all the ingredients into a large bowl.
 Mix well. 
Store in the fridge in an air-tight container.
