Cinco de Mayo: No-Fry Fried Frozen Yogurt

     Happy Cinco de Mayo! For dinner tonight we had 
chicken enchiladas, fresh guacamole, and tortilla chips.


And even though it is not Friday, 
Cinco de Mayo is a good enough excuse 
for dessert on a Thursday night, right? 
I thought so. 
Here is what we had for dessert!


No-Fry Fried Frozen Yogurt
recipe adapted from The Girl Who Ate Everything

Ingredients 

2 cups corn flakes (crushed) 
1 Tbsp sugar
1 Tbsp melted butter
 2 Tbsp corn syrup
1 tsp cinnamon
vanilla frozen yogurt 
chocolate sauce 

Directions


1. Combine the corn flakes, sugar, butter, corn syrup and cinnamon in a bowl.


2. Roll a scoop (ball shaped) of frozen-yogurt in the corn flake mix. 
*I used a large cookie scoop and the recipe covered about 6 frozen yogurt balls. 


3. Put frozen yogurt balls in bowls and keep in freezer until ready to serve. 


4. Drizzle chocolate sauce on top and eat up!
