Mini Chocolate Chip Pancake Muffins


These are so delicious! 
I keep saying this over and over, but seriously, 
if it is a meatball or in the shape of a muffin, 
it doesn't matter what it is, 
Abby will eat it. 

Mini Chocolate Chip Pancake Muffins 
recipe adapted from Bakerella

1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 tbsp sugar
2/3 cup buttermilk* 
1/4 cup egg substitute*
2 tbsp light maple syrup 
2 tbsp melted butter 
1/2 cup chocolate chips 

*I didn't have buttermilk (what the original recipe called for) so I used non-fat milk, squeezed a little lemon juice in it, and let it sit for about 10 minutes (a trick taught to me by my friend Heather). 
*The original recipe calls for 1 egg. I ran out of eggs this week, but had some left over substitute from another recipe. It worked perfectly.

Directions 

1. Preheat oven to 350. 

2. Add all dry ingredients (except chocolate chips) in one bowl and all wet ingredients in another. 

3. Combine the two bowls, mix well, then add the chocolate chips. 

4. Use a tablespoon to pour batter into 24 greased mini muffin tins. 

5. Bake for 10 minutes. 

6. Allow to cool slightly and then remove from pans.




Served with syrup and some fresh fruit, I had one happy camper.
